I&#8217;ve never had it before, but J has fond memories of it. We actually have a Filipino cookbook, <em><a href=\"https:\/\/www.goodreads.com\/book\/show\/7484834-the-filipino-cookbook\">The&nbsp;Filipino&nbsp;Cookbook<\/a><\/em><a href=\"https:\/\/www.goodreads.com\/book\/show\/7484834-the-filipino-cookbook\"> by Miki Garcia<\/a>, so we used that recipe.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" loading=\"lazy\" width=\"929\" height=\"697\" src=\"https:\/\/beansproutadventures.com\/wp-content\/uploads\/2020\/05\/IMG_20200521_201304.jpg\" alt=\"\" class=\"wp-image-2022\" srcset=\"https:\/\/beansproutadventures.com\/wp-content\/uploads\/2020\/05\/IMG_20200521_201304.jpg 929w, https:\/\/beansproutadventures.com\/wp-content\/uploads\/2020\/05\/IMG_20200521_201304-300x225.jpg 300w, https:\/\/beansproutadventures.com\/wp-content\/uploads\/2020\/05\/IMG_20200521_201304-768x576.jpg 768w\" sizes=\"(max-width: 767px) 89vw, (max-width: 1000px) 54vw, (max-width: 1071px) 543px, 580px\" \/><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">Recipe<\/h4>\n\n\n\n<ul><li>2.5 lb chicken pieces (preferably skin-on)<\/li><li>Oil<\/li><li>3 cloves garlic, chopped<\/li><li>1 tsp pepper<\/li><li>1 Tbsp brown sugar<\/li><li>1 bay leaf<\/li><li>1 onion, sliced<\/li><li>1 cup cane, apple cider, or rice vinegar (or white vinegar diluted with water)<\/li><li>1 cup soy sauce<\/li><\/ul>\n\n\n\n<p>Saut\u00e9 chicken and garlic in oil until browned. Add everything except the onion and simmer until chicken is done (about 30 min). Add the onion and cook 5 min more.<\/p>\n\n\n\n<p>I would describe the original dish as &#8220;aggressively tart&#8221;, to quote Cook&#8217;s Illustrated, and the chicken overcooked and chalky, so this version makes some changes.  Originally, you were supposed to marinate the chicken overnight, include lime juice, and cook the chicken longer.<\/p>\n\n\n\n<p>I might even decrease the cooking time more. You&#8217;re supposed to <a href=\"https:\/\/en.wikipedia.org\/wiki\/Braising\">braise<\/a> the chicken to make it tender, but we don&#8217;t have much success at that in general.
